There was no quota display in Dovecot because I produced a typo
The file /etc/dovecot/local.conf needs the following block at the end:

plugin {
 quota = fs:Filesystem
 quota2 = maildir:Maildir
}

In my original configuration, it was both times quota

If Dovecot is handled via SALT, this should be fixed. I did so manually on pumbaa already
