More Windows versions seems fine to me, although the list might get kind of long?
- Windows XP
- Windows 2000
- Windows 7
- Windows 8
- Windows Vista
- Windows 10
(any I'm missing?)
In all honesty, because so many bugs are 'All', I think that it's most important to just have the original reporter's OS (and hardware, etc..) listed in the first comment on the bug so that they don't get lost if/when the OS field gets changed.

Can't we get simply a new field which is only enabled when win and os x is chosen (both 'all') and then the user can choose his actual version?

reordered list of release.
2k can be removed as the last libo supported version was 3.6.X
Or should it be added anyway?

We talked through this, but the amount of bugs that are only relevant on one specific (supported) Windows version is rather low and doesn't qualify for massively extending the selector
We can extend the BSA/guided forms with this information in the first comment field without changing the list
